BioShaun grew up in the fishing port village of Kilkeel, Co.Down & studied catering in Newry College of Higher education. Worked under Fredric Souty in the 2AA Rosette Kee’s Hotel in Ballybofey. Aged 22 he captained the Northern Ireland Culinary Team and was Gold Medal & Class Winner at The Open British Championships at the Hotel Olympia Exhibition at the Earls Court, London. In February 2003 Shaun joined the team in The Oarsman as Head Chef & quickly help establish The Oarsman as one of the top destination addresses in the North West. Shaun was shortlisted to the Top 6 Chefs in the National Moreau Chablis Fish Dish Awards 2005. In September 2009 he was a finalist in BBC’s Masterchef: The Professionals. His is a passionate advocate of sourcing local ingredients & working closely with the artisan. |
