Our cheese is supplied by Sheridan 's cheesemongers who carefully mature the cheese
Adrahan - a semi soft cheese made by the Burns family in Co. Cork. Matured for a few weeks to bring out its full flavour. Medium strength.
Cashel blue - semi soft made by the Grubb family in Co. Tipperary. Matured for a minimum of 14 weeks for the flavour to intensify. Strong flavour.
Cooleeney – a soft camembert type cheese with a beautiful creamy texture and a distinctive aftertaste. Made by our cousins the Maher family in Co. Tipperary
Durrus - a semi soft cheese with deep ongoing mellow melting creamy flavour Developed for an extra couple of weeks to bring out its full flavour. Made by Jeffa Gill in Co. Cork .
Smoked knockanore - cheddar type, naturally smoked for good flavour. Co. Waterford .
Lavistown - semi firm, natural rind cheese with a fresh mild flavour. Made with skimmed milk in Co. Kilkenny. Mild.
St. Tola - fresh, sweet, floral, semi firm, mild flavour. Made with organic milk by the Ni Ghairohith family in Co. Clare . Aged to give a firmer texture & more developed flavour.
